Points and Coins

Last year we discovered our credit card points. I mean I guess we always knew we had them, and we had used them before for merchandise, but never for traveling. Last year we decided to use them for a little vacation. It was great!
This year we picked it up a bit.
We have been using cash for our purchases. When you use cash you get change. Coins. I don't really like counting coin....so I don't. I started saving my coins in jars. When vacation time rolled around I decided to cash my coin in. The kids loved it. We went to the bank and poured the jars into the machine and out popped a receipt with how much we had saved. It is amazing how much coins can add up. It was a great lesson in how saving even a little bit can add up over time.
I was very excited that I was able to pay for our little mini vacation with points and coins.
We have already began saving for next years trip. I think everyone will be excited to put their spare coin into the jar this year.

Chocolate Chip Mini Muffins

We love mini muffins around here. My daughter especially loves chocolate chips. When I found this recipe it was a perfect fit. I have tried many chocolate chip muffins recipes but this one we love. Honestly, they are just as yummy as a chocolate chip cookie.
Now if you are looking for healthy these may not be for you. You could always switch out the flour for some whole wheat (!i would still mix in some white flour as well). I like to make the recipe a few times as written and wait for them to fall in love with them first before I begin slowly adjusting the recipe. It's a little tricky but sometimes they don't even know the difference. Last time i made these I completely forgot to put in the melted butter and they still gobbled them up!

I believe the original recipe is for regular sized muffins. Just be sure to adjust your cooking time. I usually set my timer for about 7 minutes and check them from there for any mini version. I also adjust the temperature for the mini versions as well to 350.

Cinnamon Bun Cake

I had a request for Cinnamon Bun Cake.  I love this cake.  It is sooooo yummy.  I got this recipe from one of my favorite blogs Your Home Based Mom.  I have so many fabulous recipes from this site!  The Cinnamon Bun Cake is so easy to make and looks impressive.  This is the picture from Homebased Mom.  I will update the photo next time I make it.  I usually swirl my cinnamon mixture more than it looks like in this photo, but anyway you do it is gonna be nummy!

Homemade valentines

We made homemade valentines and boxes for valentines day at school on Tuesday.  I saw this on Pinterest and loved the idea.  We made them out of cereal boxes and covered them with craft paper.  The kids decorated them with stickers and some ribbon.  It was a fun project.  My daughter had a great time coloring the large hearts I cut out.  She did a great job!  I love homemade valentines!

Doll Cake

My Mom asked me to make a cake for her 97 year old friend who loves dolls.
It was such a fun project.  I really enjoyed it.
I just used my pampered chef batter bowl to make the doll's cake dress...

It baked for a while, but looked good when it came out,

I made her a little cake to blow our the candle (just a cupcake decorated)
there was no where on the doll to put a candle...one must have a candle
on your birthday!

Happy Birthday Ms. Virginia!

I had so much fun decorating the cupcakes I decorated a few more
Just for fun!

Malted Milk Ball Chewies

I have a favorite cookie!  And this is it!  These cookies for me are BAD news!  I can not have them in the house for too long.  It just takes to much self control!

These cookies take a little attention to make, but they are well worth the end product.

A few little tips:
*Chop up the milk balls in the food processor.  I use a large milk box looking box of milk balls (you can find it in the candy isle at Publix)
* Don't put too many on a cookie sheet.  They really spread out.  I usually only do 6 on a sheet.
*Bake cookies at 350 for 8 minutes.  Remove from oven but let cookies sit on cookie sheet for about 6 minutes before you remove them and place them on a cooling rack.  Carefully scrape cookies with a spatula.  They should pop right off the pan.

These took me a couple tries to master...but I am so glad I didn't give up.

I use a food processor to chop up the milk balls very fine

It always says to put dry ingredients in a seperate bowl....I never do unless it is a large amount of flour.
That is one more bowl to clean!

The recipe came from a blog I love too.  I have gotten a lot of great recipes from her blog.
It is a great one to visit every once in a while!

Enjoy!
